Frugality at Christmastime

One of the things that I dislike about Christmas is that everybody thinks that the best gift is always the biggest, bestest and most expensive one. Well, I totally disagree with that concept and one of the Holiday rituals around our house is our big cooking days where we bake cookies, candies and breads for gifts to our friends and families. Nothing beats a homemade loaf of Banana Nut Bread in my opinion!

Some people may call it frugal or cheap, but I call it the best gift of all. A handmade gift means you took the time and a lot of thought and planning went into the gift instead of just clicking an order on the net and drop shipping it.

Our favorite cookie to make is called Monster Cookies, not because they are big or scary it is because of the amount of ingredients. To mix this recipe you need a work-a-holic of a blender to mix all of these ingredients. The ingredients and recipe are as follows:

  1. 2 1/4 cup Peanut Butter
  2. 1/2 lb butter
  3. 1 lb Brown Sugar
  4. 2 cups White Sugar
  5. 6 eggs
  6. 2 TBSP and 2tsp Corn Syrup
  7. 4 tsp Baking Soda
  8. 1/2 lb M&M's
  9. 1/2 lb Chocolate Chips
  10. 1/2 lb Walnuts
  11. 9 cups Oatmeal
Cream together first 7 ingredients then mix well with the nest 3 ingredients. Add Oatmeal and mix. Bake on greased cookie sheet at 350 degrees for 10 -12 minutes.

So how is that for a bunch of ingredients. We actually burnt up 2 hand held mixers and our old Kitchen Aid stand mixer groaned at the job. But our new Hamilton Beach® Stand Mixer, a part of the Eclectrics® Mixer line, does the job with no problem with its 400 watt motor, 12 speed settings and 2-way rotating head!

Since we have purchased it, I can not see using anything other than our Hamilton Beach® Mixer for any of our cooking and baking needs. It is just a great part of our Christmas tradition now!

Till next time.....
